COVID-19 and its effects have caused millions of Catholics to turn to online Masses and smaller Holy Day of Obligation celebrations at home instead of at filled churches and parish halls. Roasted Lemon-Herb Chicken
Original Recipe from All Recipes (Yield 8 Servings)
Ingredients:
2 teaspoons Italian seasoning
½ teaspoon seasoning salt
½ teaspoon mustard powder
1 teaspoon garlic powder
½ teaspoon ground black pepper
1 (3 pounds) whole chicken
2 lemons
2 tablespoons olive oil
Directions:
Step 1: Preheat oven to 350 degrees F (175 degrees C).
Step 2: Combine the seasoning, salt, mustard powder, garlic powder and black pepper; set aside. Rinse the chicken thoroughly, and remove the giblets. Place chicken in a 9×13 inch baking dish. Sprinkle 1 1/2 teaspoons of the spice mixture inside the chicken. Rub the remaining mixture on the outside of the chicken.
Step 3: Squeeze the juice of the 2 lemons into a small bowl or cup, and mix with the olive oil. Drizzle this oil/juice mixture over the chicken.
Step 4: Bake in the preheated oven for 1 1/2 hours, or until juices run clear, basting several times with the remaining oil mixture.

Simple Bruschetta
Original Recipe from Delish (Yield 10 Servings)
Ingredients:
For the Tomatoes
4 tbsp. extra-virgin olive oil
2 cloves garlic, thinly sliced
4 large tomatoes, diced
1/4 c. thinly sliced basil
2 tbsp. balsamic vinegar
1 tsp. kosher salt
Pinch of crushed red pepper flakes
For the Bread
1 large baguette, sliced ¼” thick on the bias
Extra-virgin olive oil, for brushing
2 cloves garlic, halved
Directions:
Step 1: Make marinated tomatoes: Preheat oven to 400°. In a medium skillet over medium-low heat, heat oil. Add garlic and cook until lightly golden, 2 to 4 minutes, then remove from heat and let cool.
Step 2: In a large bowl, toss together tomatoes, basil, vinegar, salt, and red pepper flakes. Add garlic and oil and toss to combine. Let marinate for 30 minutes.
Step 3: Meanwhile, toast bread: Brush bread on both sides lightly with oil and place on a large baking sheet. Toast bread until golden, 10 to 15 minutes, turning halfway through. Let bread cool for 5 minutes, then rub tops of bread with halved garlic cloves.
Step 4: Spoon tomatoes on top of bread just before serving.

Angel Hair Pasta Recipe
Original Recipe from The Stay Home Chef (Yield 6 Servings)
Ingredients:
1 pound angel hair pasta
1/2 cup unsalted butter
2 garlic cloves peeled and halved
1/2 cup freshly grated parmesan cheese
optional minced chives or parsley, for garnish
Directions:
Step 1: Cook pasta in salted water according to package directions.
Step 2: Meanwhile, melt butter in a small saucepan over medium heat. Add in garlic cloves. Continue cooking over medium heat until butter foams, giving the pan a good occasional swirl.
Step 3: Once butter foams keep a close eye on it. The color will change from yellow to tan and then to brown.
Step 4: Once it reaches brown, remove it from the heat immediately and pour over the cooked pasta, discarding the garlic cloves.
Step 5: Stir in parmesan cheese until melted. Serve hot with some minced chives or parsley.
